Loaded Turkey burrito recipe

Title: Loaded Turkey Burrito

Ingredient: Lilydale Carved Turkey Breast

Loaded Turkey Burrito:
Description: Burrito night just got an upgrade! Try adding Turkey to your burritos for a delicious change to this classic dish. 

Prep Time: 25 minutes

Cook Time:  30 minutes

Total Time: 55 minutes

Makes: 4 servings

Ingredients:

2 packages (300g) Lilydale® Oven Roasted Carved Turkey Breast 

1 tbsp (15mL) olive oil

1 green onion, thinly sliced 

2 red bell peppers, seeded and sliced 

1 lime

¾ cup (175 mL) salsa 

½ cup (125 mL) low fat sour cream 

½  tsp (2.5 mL) ground cumin

½  tsp (2.5 mL) red Chili powder 

1 cup (250 mL) canned corn

2 cups (500 mL) cheddar cheese, grated 

¼ cup (62.5 mL) chopped fresh cilantro for garnish (optional) 

8 large whole wheat tortillas

Directions:

1. Heat oil in a large non-stick skillet over medium heat. Sauté onions and bell peppers until onions are translucent.

2. Add in Lilydale® Oven Roasted Carved Turkey Breast, chili powder and cumin. Cook for Approximately 5 minutes until entire filling mixture is hot.

3. Season with salt and pepper as needed.

4. Remove from heat and keep covered on the side.

5. Using one tortilla at a time, lay flat on a chopping board and fill with filling.

6. Spoon 1-2 tablespoons of filling along the centre of the tortilla, top with corn, salsa, sour cream and cheese. Garnish with with cilantro if desired.

7. Gently fold sides in and roll up to keep the filling inside.

8. Toast on a new skillet on medium high until sides of burrito are slightly toasted (approximately 2 minutes per side).

9. Repeat with remaining tortillas.

TIP

Be sure not to overfill your burrito or it will not close.

My 2019 HOLIDAY Last Minute Gift Guide for my fellow procrastinators! 7 no fail gifts for all your favourite people :)

4) Gift card for a local mall! My local mall is Bramlea City Centre and I’m always there so actually this ones for me:) I asked my husband to gift me a BCC gift card! Hey at least I made it easy for him !! BCC

5) Kitchen stuff Plus Double Wall French Coffee Press. Anyone in your life who loves coffee would love one of these! This one I purchased for both my dad and my husband. 6) Passes to your local aquarium or theme park ! If you want a good gift for kids I highly recommend this. We are gifting passes to Ripleys Aquarium and Canada’s Wonderland to my sisters and their kids. Educational and fun, the perfect combination. Also Canadas wonderland has been converted into a winter Wonderland for the holiday season and Winterfest at Wonderland is open until December 31st! 5 minute sugar free BLW muffins!

Let me start by saying my kids are PICKY eaters. As in my daughter will not open her mouth if I try to get her to eat something foreign to her (including any kind of meat) so I have to be creative and make “snacks” that are both nutritious and delicious! I can’t even remember where I found this recipe but it is one we go to regularly. It takes 5 minutes to prep, 16-18 minutes of baking and voila healthy snacks for my picky eaters:) let me know in the comments below if you want any more BLW ideas or recipes I would love to share! These are great for lunch , for a snack on the road and my entire family enjoys them, even my husband who is pickier than my kiddos!!

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk
  • 2 cups unsweetened applesauce (any brand will do)
  • 1 egg
  • 1 tablespoon vanilla extract
  • 5 Tablespoons butter , melted
  • 1/2 cup of organic honey (any brand) you can also replace this with sugar if you don’t want sugar free
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon or nutmeg (I prefer to mix them both)

INSTRUCTIONS:

1) preheat the oven to 375 degrees and line or lightly grease a 12 cup muffin tray and set aside

Step 2) In a large bowl, combine the oats, applesauce, milk, egg, vanilla, honey, and butter.

Step 3) fold in the flour, baking powder, baking soda, cinnamon/nutmeg

Step 4) pour batter evenly into the muffin tin

Step 5) bake for 16-18 minutes or until muffins are cooked through (* I check with a toothpick) do not overcook or they will be dry!

Step 6) remove to a cooling rack and serve when cool. I add jam on top as a treat for my kiddos but feel free to add whichever toppings you like!

You can also double the recipe and make extras to freeze just freeze them in a ziplock bag when cool! Let me know how they turned out in the comments below ❤️

Our #staycation at @thesheraton

We recently had a #staycation at the Sheraton Centre Hotel Toronto and it was wonderful. It was actually our first staycation ever and literally an hour after we checked in, my husband and I both said “why didn’t we do this earlier” . We are most definitely returning this summer and we cannot wait for our little break away from reality again !

LOCATION

The Sheraton centre Toronto hotel is literally in the perfect location. The view from our window was Nathan Phillips Square, the Toronto sign to be exact! Talk about being in the centre of it all.

The Sheraton Centre Toronto was the perfect location for our family staycation because it made getting around the city with our (double) stroller sooo easy. I highly recommend you keep in mind location when booking a family trip, especially if you’ll be running around with a stroller . We were less than a 10 minute walk to the CN Tower, Nathan Philips Square, the Eaton Centre, The Rogers Centre and the ROM. It was so convenient to be able to walk everywhere and not have to pack up the stroller, worry about parking, load and unload the kids etc. I’m honestly not normally a city girl but I truly loved every minute of living right in the centre of it all!

AMENITIES

It was so convenient literally being in the centre of the city but we honestly didn’t even need to leave the hotel if we didn’t want to. The Sheraton Centre is home to the largest indoor-outdoor heated pool in downtown Toronto, making it the perfect vacation destination for families travelling to the city during any season. When we went it was a bit chilly but because it was heated we were able to still enjoy the beautiful view and we even got to grab a drink at the pool bar! There are also a ton of great restaurants and bars inside the property so you literally have everything in arms reach!

SERVICES

I have honestly never experienced service like this before and this was our 4th hotel in the past 6 months! From the quick and easy check in, to the most friendly concierge I’ve ever encountered, to the staff who gave us water bottles while we were waiting for our luggage to be delivered to our rooms, to the staff at the gym, everyone was so friendly and kind which really makes everything easier especially when travelling with kids!

CN TOWER TRIP

On top of being in a great location and providing excellent service, the hotel also organized and pre-purchased tickets for us to have a day out with the kids. The Sheraton Centre Toronto offers families discounts to local family-friendly attractions. Just contact the hotels concierge to learn how you can save on trips to the CN Tower or Ripley’s Aquarium. We decided to go to the CN Tower because the kids have never been before and not only did they have our tickets ready for us, they also had suggestions and recommendations on the best way to get there. When you’re travelling with kids, anything that makes your day easier like discounted tickets and helping organize your transportation is a win in my books.

All in all we had a lovely trip and we cannot wait for our next visit!

Quality Time with Quaker Chewy® Mermaid Confetti Chip granola bars

Now that Jenna is older, and our family has grown I always make sure we get some quality mommy daughter time.

Two of our favorite times to share together are Arts & Crafts and eating delicious snacks 🙂 When we enjoy Quaker Chewy® Mermaid Confetti Chip granola bars by @QuakerCanada we feel inspired and dive right into our creative sides. These delectable snacks added a splash of fun to our family time.

One sunny afternoon we pulled out our #chewymermaid kit from @QuakerCanada; which can turn up the fun to any ordinary moment. Jenna’s favorite part was of course the yummy Chewy​® ​Mermaid Confetti Chip granola bars, she loved them!  We decorated a treasure chest for Jenna, designed a pencil case for school and made sea shell crowns while snacking on @QuakerCanada’s wholesome delicious granola bars.

I will definitely be putting these bars in Jenna’s lunchbox to remind her of the magical moments we had together.
