5 step butternut squash in the instant pot

This recipe is easy and delicious. My husband is the pickiest eater and he ate two bowls! I love a nice creamy soup on a cold day, it’s perfect for winter days and for those rainy spring days! Actually let’s be honest I love soup any day. It’s a quick and simple recipe and anyone can make it!! Here you go, enjoy and let me know in the comments how it turned out 🙂

PREP TIME: 20 minutes

COOK TIME: 15 minutes

TOTAL TIME: 35 minutes

INGREDIENTS: (makes 6-8 servings)

1 large butternut squash (cut into one inch cubes )

2 large carrots (cut into thin slices)

2 celery stalks (cut into one inch pieces)

1/2 a large red bell pepper (cut into one inch cubes)

1 medium yellow onion (finely chopped)

1 teaspoon crushed garlic

1 teaspoon crushed ginger

Salt and pepper to taste

3 cups chicken broth (or vegetable broth whichever you prefer)

1/2 teaspoon chilli (optional)

1/2 teaspoon cumin powder

1/2 teaspoon paprika (optional)

1/2 cup full cream (optional)

1 tablespoon olive oil


1) Turn the instant pot on to sauté add in the oil, onions, garlic, ginger and stir until onions are translucent (about 2-3 minutes) stirring frequently

2) Add in the celery, carrots and red pepper and keep stirring on sauté for 2 minutes

3) Add in the butternut squash, cumin, paprika, chilli powder, and chicken broth

4) switch the instant pot to manual (high pressure) and set it for 10 minutes and let it release naturally

5) Puree with immersion blender until desired consistency is reached and add salt and pepper to taste. Add in cream , stir and serve! (alternatively you can blend all ingredients with a blender) ENJOY:)

How I’m keeping my children busy and myself sane :)

It’s tough out there right now and even tougher in here 🙈 it is not easy to go from having all the freedom in the world to being restricted to our homes. Especially with two kids in tow. I’ve created a schedule for my 3.5 year old, I’ve enlisted help for my 23 month old (my in laws and husband) and it has made such a huge difference in our days. The days go by faster and our screen time has been Cut down in half. My daughter only watches about 1 hour a day and she seems happier and more energetic than those first few days where we had no schedule and just did activities here and there. I also find the online courses help a lot and I don’t count those as screen time I count those as educational mom breaks 😂! I’ve included my schedule below as well as a list of activities that help keep my 22month old busy and active. I am also including below numerous links to different educational sites. We love the scholastic Canada one and the abc kids! Let me know in the comments below what you’ve been doing to keep busy or if you have any suggestions of any other sites or activities we could do!

Our schedule for our 3.5 year old who is regularly in Montessori

Activity ideas for my 22 month old. It’s impossible for me to keep a schedule with him and I’m fine with that. I let him have free play most of the day and when he’s bored I add in these activities.

1) window stickers from Dollarama have been a huge hit they can be peeled off and reapplied endless amounts of times and it keeps him busy for ages !

2) paint in a ziplock bag or actual paint if you are okay with a mess. I fill a large zip lock bag with different colour paint and tape it to his high chair table and he basically finger paints without actually touching the paint. I also add sparkles to create more excitement.

3) dancing (he loves playing head and should knees and toes with his sister and he has a few favourite songs that he loves dancing to)

4) story time (his attention span is short). But I try to use props and voices and it usually helps

5) colouring with crayons he loves playing with crayons and he loves to eat them even more so this one is tough but good practice 🙂

6) snow ! My friend showed me this one and it’s great for snowy days (like yesterday) I fill up a bucket of snow and bury some small toys in there I set it up on a towel on the kitchen floor and let him play . This activity is short because he gets cold quickly but it’s still something.

7) pasta bowl! I give him raw noodles and a few big plastic bowls and spoons with some plastic measuring cups and he just plays with them for ages! This one can be messy so I try to keep him in the kitchen which doesn’t always work.

8) Walks outside or free play in the backyard . This is the best part of both of our days and fun for the whole family !

Loaded Turkey burrito recipe

Title: Loaded Turkey Burrito

Ingredient: Lilydale Carved Turkey Breast

Loaded Turkey Burrito:
Description: Burrito night just got an upgrade! Try adding Turkey to your burritos for a delicious change to this classic dish. 

Prep Time: 25 minutes

Cook Time:  30 minutes

Total Time: 55 minutes

Makes: 4 servings


2 packages (300g) Lilydale® Oven Roasted Carved Turkey Breast 

1 tbsp (15mL) olive oil

1 green onion, thinly sliced 

2 red bell peppers, seeded and sliced 

1 lime

¾ cup (175 mL) salsa 

½ cup (125 mL) low fat sour cream 

½  tsp (2.5 mL) ground cumin

½  tsp (2.5 mL) red Chili powder 

1 cup (250 mL) canned corn

2 cups (500 mL) cheddar cheese, grated 

¼ cup (62.5 mL) chopped fresh cilantro for garnish (optional) 

8 large whole wheat tortillas


1. Heat oil in a large non-stick skillet over medium heat. Sauté onions and bell peppers until onions are translucent.

2. Add in Lilydale® Oven Roasted Carved Turkey Breast, chili powder and cumin. Cook for Approximately 5 minutes until entire filling mixture is hot.

3. Season with salt and pepper as needed.

4. Remove from heat and keep covered on the side.

5. Using one tortilla at a time, lay flat on a chopping board and fill with filling.

6. Spoon 1-2 tablespoons of filling along the centre of the tortilla, top with corn, salsa, sour cream and cheese. Garnish with with cilantro if desired.

7. Gently fold sides in and roll up to keep the filling inside.

8. Toast on a new skillet on medium high until sides of burrito are slightly toasted (approximately 2 minutes per side).

9. Repeat with remaining tortillas.


Be sure not to overfill your burrito or it will not close.

5 minute sugar free BLW muffins!

Let me start by saying my kids are PICKY eaters. As in my daughter will not open her mouth if I try to get her to eat something foreign to her (including any kind of meat) so I have to be creative and make “snacks” that are both nutritious and delicious! I can’t even remember where I found this recipe but it is one we go to regularly. It takes 5 minutes to prep, 16-18 minutes of baking and voila healthy snacks for my picky eaters:) let me know in the comments below if you want any more BLW ideas or recipes I would love to share! These are great for lunch , for a snack on the road and my entire family enjoys them, even my husband who is pickier than my kiddos!!


  • 1 cup old-fashioned rolled oats
  • 1 cup milk
  • 2 cups unsweetened applesauce (any brand will do)
  • 1 egg
  • 1 tablespoon vanilla extract
  • 5 Tablespoons butter , melted
  • 1/2 cup of organic honey (any brand) you can also replace this with sugar if you don’t want sugar free
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon or nutmeg (I prefer to mix them both)


1) preheat the oven to 375 degrees and line or lightly grease a 12 cup muffin tray and set aside

Step 2) In a large bowl, combine the oats, applesauce, milk, egg, vanilla, honey, and butter.

Step 3) fold in the flour, baking powder, baking soda, cinnamon/nutmeg

Step 4) pour batter evenly into the muffin tin

Step 5) bake for 16-18 minutes or until muffins are cooked through (* I check with a toothpick) do not overcook or they will be dry!

Step 6) remove to a cooling rack and serve when cool. I add jam on top as a treat for my kiddos but feel free to add whichever toppings you like!

You can also double the recipe and make extras to freeze just freeze them in a ziplock bag when cool! Let me know how they turned out in the comments below ❤️
